Well our stay-cation is officially over. After almost a month off from Mairead’s preschool and having Aaron home with us for an extended break, we are back to reality this week. I don’t know why but I was having such a difficult time getting back in my groove after the holidays but I just could not seem to get ahead! Perhaps it was having Aaron home with us for so long. Don’t get me wrong, I hate when he has…
It’s 2017! Let’s just cut to the chase; Christmas is over and we are all a little fatter. Every year it’s the same vicious cycle so I’ll start the year with some healthy food! It’s probably obvious by now that I love to eat but eating healthy is definitely important to me. I beam with pride when I see my daughter happily eating her salad and even at times asking for one! I’m going to skip the whole New Years Resolution…
Like many of you I’m sure, I am running around like a mad hen to get everything ready for Christmas; Santa is coming tomorrow night! Eeek! But before all the Christmas festivities begin, last night we had another celebration in our house, Aaron’s birthday! Aaron was born three days before Christmas and usually got the short end of the stick in terms of having an exclusive birthday celebration. So naturally, I always make the extra effort for Aaron to have…
After a Saturday out scrambling for some last minute Christmas gifts in a sea of people, Sunday was spent at home with the family, as it should be. The temperature finally warmed up enough to play outside so Mairead and I headed out for a walk with her sled. She got lazy on me and it turned into a (much needed) hike for me while Mai ate some fresh fallen snow and we had to stop every 10 feet to pick…
With Christmas less than two weeks away…..I’m going to stop for a second and let you get over that panic attack…..most of us will be busy entertaining guests pretty soon. The last thing anyone needs this time of year is a difficult dish to throw together when company arrives, so let me make your life a little easier. This is an appetizer I have made countless times for friends and family and although it may not look like much, these…
Brr! Anyone who knows me I’m sure is getting tried of me complaining about how cold it is in Alberta this weekend but come on, -39° C with the wind! I know, I sound like a little old lady with all this talk about the weather. But any parent who has to remove their child’s parka to fit them in their car seat knows what I am talking about right now. One stop shopping from here on out! On top of…
Another busy week, another busy weekend. Only this time Mairead and I are both battling colds on top of it all. Aaron took off for work in Toronto a few days ago until Christmas (wah wah) so Mai and I are back to holding down the fort until then. Yesterday Mairead and I made the trek into Edmonton to see Disney on Ice! I think I was more excited that she was. The performance was excellent but I wasn’t a…
Okay, it’s December 1st, bring on everything Christmas! On Tuesday we picked out our tree (which I stayed up way too late decorating) and last night was Mairead’s preschool Christmas concert. And what a concert it was! Fifteen minutes of the cutest little girls and boys singing about baby Jesus and melting snowmen. Mairead was beaming with joy alongside her little friends. It was wonderful 🙂 Afterwards everyone gathered for a pot luck of goodies. Naturally, we brought dessert. Because…
Brussels sprouts may not fall on everyone’s list of favorite veggies but they are chalk full of nutrients and amazingly, my 4 year old really enjoys them! After a weekend full of indulging I have been putting some extra efforts in this weeks meals to make up for all that extra grease and sugar. This dish originally began with me trying to find foods that were visually appealing so that meal time didn’t have to be a fight with Mairead.…
Aaron came home this weekend! ***Jumping for joy*** After 6 looong weeks working out-of-province he was able to get a 4 day weekend off! Needless to say, Mairead and I are incredibly happy to finally have him home. We spent our weekend doing nothing except enjoy our little family again and it was lovely. I cooked up a storm and tried out a few new recipes that I was waiting for Aaron to be home for (obviously they called for…
