Smoked Gouda & Prosciutto on Rosemary Crackers with Honey

With Christmas less than two weeks away…..I’m going to stop for a second and let you get over that panic attack…..most of us will be busy entertaining guests pretty soon.  The last thing anyone needs this time of year is a difficult dish to throw together when company arrives, so let me make your life a little easier.

This is an appetizer I have made countless times for friends and family and although it may not look like much, these are some of the reactions I’ve gotten to this sweet and savory snack:

Can you make some more of whatever that was we just ate?
Ya make more!

So they enjoyed it to say the least.

Call me crazy, but I made my own rosemary cracker for the purpose of this post.  Confession time: sometimes (most times) my photos are the most challenging part of my food presentation.  I have always made this appetizer with a rosemary flatbread cracker that I found in the bakery section of Safeway but once I break it apart and plate it, it looks like I just dumped it on a plate and the visual appeal does me no favors in the blogging world.  So I baked my own cracker for the purpose of a tidier presentation.  But they were so good!  I’ve been snacking on them all day.

Nevertheless let’s keep it real; if you’re short on time go with a store bought cracker although I highly recommend rosemary crackers with this recipe.  If you make them yourself be sure to roll it out nice and thin to get that good crisp, if not they will be too flaky.  Have fun with all your entertaining this holiday and enjoy!

Smoked Gouda & Prosciutto on Rosemary Crackers with Honey

Ingredients

Rosemary crackers (recipe below)
4 oz. Smoked Gouda cheese,
4 oz. prosciutto
honey to drizzle

Directions

Preheat oven to broil setting.

Lay crackers in a single layer on a baking sheet.

Assemble each cracker with pieces of prosciutto and top with slices of Gouda.

Broil in the oven for 1-3 minutes just until cheese has melted.

Transfer crackers to a serving platter and drizzle with honey and serve warm.  Enjoy!

Homemade Rosemary Crackers

1 3/4 cup all purpose flour
1 tbsp chopped rosemary
1 tsp baking powder
3/4 tsp salt
1/2 cup water
1/3 cup olive oil, more for brushing

Directions

Preheat oven 450 degrees.

In a large bowl, whisk together flour, rosemary, baking powder and salt.  Create a well in the middle of the mixture and add water and olive oil and mix until a dough is formed.

Turn the dough to a sheet of parchment paper and divide into three pieces.  Roll out the pieces of dough one at a time very thin.  Brush with olive oil and season with salt.

Gently cut through the dough to create your crackers and transfer the dough leaving it on the parchment paper to a baking sheet and bake for 8-10 minutes, until lightly golden and crisp.
