Chocolate Toasted Coconut Peanut Butter Banana Smoothie

Hello again!  Thank you for staying with me and my very sporadic posts!!  This blog has really fallen to the back burner for me a lot in the last six months, but don’t worry I haven’t forgotten about it.  I do still have a lot of great ideas spinning around in my mind.  In fact, I whipped up a healthy treat this morning that was certainly blog worthy, so I made sure to share this with you today!

This past week was fall break for the schools in Alberta.  I am lucky enough that my role at the schools gets to enjoy the break as well.  We were really looking forward to it  and I had 100 things planned for me and Mairead to do together on our week off.  But when I picked up Mairead from daycare Friday after work, she was running a fever of 104F and by bedtime was projectile vomiting all over the bathroom!

The next seven days were spent between the couch and bed; we left the house once all week and it was only to get  to the clinic for some antibiotics for a strep throat infection.  By midweek Mairead was kind enough to share her bug with me and I slept every chance I got.  To say this was the week from hell would be an understatement.  As thankful as I am that Mairead is back to full health before we head back to school and work tomorrow, I am feeling like I got jipped!  I still need a break, maybe now more than before.  Oh and to top it off, Aaron has been working away for the last two weeks.  Boourns!

Even with Mairead back on the mend, it has been tough getting her to eat solid food again.  She lost quite a bit of weight while she was sick.  When she came down for breakfast this morning I could see her pants were sagging on her little bum and her legs looked like little toothpicks.  So after she complained about the oatmeal and turned her nose up at some scrambled eggs and toast, I knew I was going to have to step up my game and start pumping some better nutrients into her.

There are always overripe bananas in our house, so when looking for smoothie add-ins it’s usually a no brainer.  Next I grabbed the peanut butter and cocoa, and the rest is history.  I originally saw this recipe at The Kitchen McCabe (my idol!) but I altered the measurements of the ingredients quite a lot and I’m glad I did because it turned out perfectly delicious.  I normally don’t enjoy overly-sweet drinks but this is one I will make an exception for.  I think next time I will use unsweetened coconut to cut down on the sweetness.  But all in all, this is a sweet smoothie treat I will be making again.  Enjoy!

 

Chocolate Toasted Coconut Peanut Butter Banana Smoothie

Ingredients

2 bananas, frozen
1/2 cup toasted coconut
1/4 cup peanut butter
2 Tbsp cocoa powder
1 Tbsp maple syrup
1 tsp vanilla extract
1 cup milk, dairy or non-dairy

Directions

Add all ingredients to a blender and blend on high until smooth.  Enjoy!
