It’s finally summer time! At our house that means easy mornings, sunny afternoon picnics, likely a camping trip or two, and a visit to Cape Breton!
I can’t believe we are days away from July already. This year is flying by at record speed. Mairead graduated from Kindergarten and is heading to grade 1 in September. It will be a big change for her being full days at school and a big change for all of us because this Mama is going back to work full time. I accepted a position with one of the school districts as a Family Wellness Worker! Don’t panic, I still get my summers off 😉 But for now we are going to stretch out these summer days as long as we can!
Like all of you I’m sure, the last thing I want to do on a hot day is slave over a hot stove which makes baking all my goodies a little tricky these days. I’ve been checking out a lot more raw food recipes partly for healthier options and partly because I’m tired of cooking all the time (I NEVER thought I would hear myself say that). I’ve become a lot more conscientious of my food waste and cut waaaay back on my meat consumption so our meals and snacks have become a lot simpler; which is the lifestyle I crave.
I’ve made these cocoa date energy bites a few times now and they get rave reviews from everyone around here so who better to share them with than you! Like any “energy bite” recipe you can very easily swap out one ingredient for another (peanut butter vs almond butter; various nuts, seeds, etc.) and still get a nutritious little treat. Cocoa Date Energy Bites
Ingredients
12-14 pitted dates
1/4 cup peanut butter
2 tbsp cocoa powder
1 1/2 tbsp chia seeds
1 tbsp ground flax seed
Directions
Add all ingredients into a food processor and blend until fully mixed.
Using your hands, roll mixture into bite size balls.
Store in an air tight container and keep in the refrigerator.
