Oh my God, Christmas is 5 weeks away! How did that even happen?!!
I spent my week visiting daycares (the horror!) writing cover letters, writing Christmas lists, and attempting Christmas shopping a few times only to pick items up, walk around the store with them, put them back and leave empty-handed. Usually, I am excited about the Chrismas prep gong show but this year I’m feeling a little less enthused. I feel guilty saying that…I’m sure once we get our Christmas tree up the “magic” will set in.
One fun thing about this time of year is all the great handcrafted art and craft sales that pop up everywhere. Today we hit up a pretty good one at the Enjoy Centre but as per usual I only bought things for myself…..Lol. I purchased 3 wool dryer balls, some fancy soap, and some really yummy flavored vinegar that are great for cocktails…I know I thought it was weird too but then I tried it and they are super good. One guilty pleasure I get from these sales (artists please don’t hate me, I’m not rich) is ideas of things I like that I can make myself for less. Just for me and my house though, I never sell those items; that would be wrong!
But let’s get to business, the food! I was procrastinating going grocery shopping and rummaging through the pantry when I found a jar of apple butter from a gift set of jam. My first thought was ‘what the hell is this?’ but when Mairead had a friend over for a sleepover this weekend and asked for pizza, I began brainstorming.
While I whipped up a pep & cheese for the girls, I set aside some dough for myself and made this apple prosciutto flatbread with toasted walnuts and goat cheese. I used the apple butter as the pizza sauce and I’m so glad I did! I loved the contrast of sweet and savory in every bite. And the apple butter as a base was a great idea! Crazy good!! I’ll be making this one again for sure. Enjoy!
Apple Prosciutto Flatbread with Toasted Walnuts & Goat Cheese
Ingredients
1 flatbread*
1/4 cup apple butter
2 strips prosciutto, cut into 1-inch pieces
caramelized onion
1/2 small apple, sliced very thin
1 – 2 tbsp walnut pieces, toasted
1-ounce goat cheese, crumbled
a small handful of baby kale
balsamic reduction to drizzle
*I used my homemade pizza dough recipe (click here for the recipe) from my Roasted Beet and Tomato Pizza post. I used half of the dough to make a pep & cheese pizza for the kids and the other half for this recipe.
Directions
Preheat oven 400 degrees (or according to your flatbread directions if using a different crust than the one above).
Smear apple butter all over the flatbread dough, leaving a 1/2 inch bare around the edge of the crust.
Layer prosciutto, onion, apple, walnut and goat cheese evenly over the flatbread.
Bake for about 15 minutes or until crust is lightly golden.
Remove from oven and slice.
Top with kale and balsamic reduction drizzle. Enjoy!
