It’s official, Mairead is a big kid! This week we celebrated her graduation from preschool. They had the sweetest little ceremony complete with gowns and caps, then a party with her classmates. I’d be lying if I said that it didn’t tug at the heartstrings a little that these days have some to an end. Now on to big kid school! Crazy.
After all the celebrating, I took Mairead to a spray park this afternoon to cool off. Funny story….last summer I took Mairead to a new spray park we had never been to before. Mai was hauling water in a bucket to the sand to make a sand castle and asked for my help turning on one of the spouts. Assuming it would shoot out a couple feet like most spray parks, I spun the thing around to fill the bucket. Well, little did I know this thing had super soaker powers! It shot across the playground about 20 feet in the air and I sprayed another Mom right in the face, HARD! I froze, laughed then pointed the spout towards the trees. It took me a couple minutes to stop laughing enough to go over and apologize, but she was soaked! Her hair was matted to her head LOL!! Thankfully, she laughed it off. Needless to say, we haven’t gone back to that park since.
Tonight for supper we’re having leftover sausage linguine with a side strawberry spinach caprese salad. I made this for lunch a few days ago and haven’t stopped thinking about it. Caprese is a salad that is so simple but so delicious. There was really no need to mess with a good thing but I’m trying to up my iron intake (hence the spinach), and I had some strawberries that needed to be eaten, so this is where they ended up. And as for the strawberry balsamic vinegar, I could throw back shots of this stuff I love it so much! Enjoy folks.
Strawberry Spinach Caprese Salad
*Makes 2 servings
Ingredients
2 cups baby spinach
4-6 strawberries, quartered
6-8 cherry tomatoes, halved
soft mozzarella cheese
4-6 fresh basil leaves, chopped
Strawberry Balsamic Vinegar to drizzle
Directions
Toss or assemble spinach, strawberries, tomatoes, cheese and basil leaves on a plate as desired.
Drizzle with strawberry balsamic vinegar. Enjoy!
*Regular balsamic vinegar will pair just as lovely if needed 🙂
