I am not looking for any kind of congratulatory ratification here but I have been kicking ass in the clean eating department lately. Part of this is due to the hot weather and me not wanting to stand in front of the stove and also to Aaron being away, therefore, Mairead and I have been surviving on a mostly raw diet. But it has been great; my skin looks healthier, I have so much more energy, and guys, I have even cut back on the coffee! I know, right?!!
So, May long weekend was not too eventful this year; I took Mai to a carnival and wasted $40 on tickets when all she really wanted was a bag of cotton candy. We were able to drive out to visit our cousins in the countryside on Sunday which was super nice. Come to think of it I did have a cookie while I was there, but I think it was gluten free! Cut me some slack, it was Janna’s house…you don’t go to Janna’s house and not have a cookie! And surprise surprise, yesterday Mairead had friends over all day (there is never not children who do not belong to me in my house).
So as per usual, Mairead insisted on a picnic for lunch. Great idea kids, get out haha. So while Mai and her buddies set up their picnic blanket and spent 15 minutes fighting over who got to wear what sunglasses, I made the girls a healthy and refreshing little fruit salad to enjoy in the sunshine. It was so pretty and delicious that I made a second plate just for myself to enjoy.
I came across a recipe a few years ago which gave me the idea for this one and thought if I ever have a wedding that I would serve this as dessert along with a slice of wedding cake. Well, I’ve never had a wedding…and now Mairead and her pal are in the backyard eating this delicious treat sitting on an old torn bedsheet in the grass that needs to be mowed. 😉

Watermelon Citrus Salad with Fresh Mint & Honey
*Makes 2 small servings
Ingredients
1 large slice of watermelon, cut into small triangles
1 grapefruit, sliced and peeled
2 tangerines, sliced and peeled
3-4 fresh mint leaves, chopped
lemon honey or any preferred honey to drizzle
Directions
Assemble all ingredients on a serving platter as desired and drizzle with honey. Enjoy!
