All week I’ve been doing really well at choosing healthy foods for snacks and meal times (and feeling better for it!) But yesterday we woke up to an extra cold winter wonderland and my little one and I were craving some good old fashioned comfort food – oatmeal chocolate chip cookies!
We didn’t waste any time grabbing what we needed from the pantry and got to work. This recipe is one of those beauties that can be thrown together quickly and you can freeze them in an airtight container if you ever want to have “freshly-baked” cookies when those unexpected guests arrive. Don’t forget to have a tall glass of cold milk (or hot coffee) on stand by! Mmm mmm Enjoy!
Oooh look at that ooey gooey chocolate-y goodness!
Someone couldn’t keep her little paws of the cookies while I was trying to get a few shots. But who could blame her really?
Ingredients:
¾ cup butter, softened
¾ cup brown sugar, packed
½ cup white sugar
1 egg
2 tbsp water
2 tsp vanilla extract
¾ cup all-purpose flour
1 tsp cinnamon
¾ tsp baking soda
3 cups rolled oats *
1 ½ cups chocolate chunks
* These are make a hearty oatmeal cookie. If you prefer a softer chewier cookies use less rolled oats.
Directions:
Preheat oven to 350°F.
In a large bowl combine butter, sugars, egg, water and vanilla until light and fluffy.
In a separate bowl combine flour, cinnamon and baking powder. Then add to the butter mixture. Mix well until all ingredients are fully incorporated.
Stir in the rolled oats and chocolate chips.
Drop by heaping spoonfuls on a parchment paper lined baking sheet.
Bake 10-12 minutes, or until cookies are lightly browned around the edges.
