If you’re looking for a recipe to impress then you’ve found it! I have made this mouth-watering treat several times and for several people and everyone comes back for a seconds! Even the neighbours are talking about it.
I made a batch for my family today as an attempt to get my daughter busy in the kitchen but she ditched me for an episode of Curious George and some snuggles with Daddy. I can’t say I blame her. But when I pulled these beauties from the oven they both came running. I hope you enjoy these carrot cake whoopie pies as much as we do!
Cookie Ingredients:
1 ¾ cup all-purpose flour
1 tsp ground cinnamon
1 tsp ground ginger
1 tsp salt
1 tsp baking powder
½ tsp baking soda
¼ tsp ground nutmeg
1 cup butter, softened
¾ cup brown sugar, packed
½ granulated sugar
2 eggs
1 tsp vanilla
1 tsp grated orange rind
1 cup rolled oats
2 cups finely grated carrots
Icing Ingredients:
¼ cup cream cheese, softened
¼ cup butter
1 ½ cups icing sugar
Directions:
Preheat oven to 350°F. Line baking sheet with parchment paper.
Stir together flour, cinnamon, ginger, salt, baking powder, baking soda and nutmeg in a medium sized bowl. Set aside.
In a large bowl beat butter and sugars using an electric mixer until fluffy. Add eggs one at a time and continue beating until combined. Add vanilla and orange rind and mix.
Add flour mixture to the butter/sugar mix and stir. Add oats and carrots, mix well.
Drop heaped spoonful’s of batter 2 inches apart on the lined baking sheet. Bake for approximately 15 minutes or until pies are lightly browned on the bottom. Cool completely.
Using an electric mixture beat cream cheese, butter and icing sugar until well mixed and no lumps appear.
Sandwich cookies together with the icing. Enjoy!
