Apple Cinnamon Muffins

Well I was right, the cookies didn’t last a minute and that’s how apple cinnamon muffins happened.

Earlier today I attempted french hot chocolate which sounded easy enough but it didn’t really turn out.  But I drank it anyway and gave myself a stomach ache.  What am I six years old?  I’ll never learn.  But in my defense I used the good chocolate and I wasn’t letting it go to waste!

So to redeem myself I baked a batch of apple cinnamon muffins and they turned out great.  They are light and soft, and full of that classic apple cinnamon flavor.  There are few things that pair together as nicely as those two.

I intended on tweeking the recipe to make a healthier version then got distracted and forgot what I was doing.  Just head over to one of my salad recipes from previous posts and it will all balance itself out 😉   I’m already thinking about enjoying one of these with my coffee tomorrow.  Enjoy folks.

Apple Cinnamon Muffins

Ingredients

2 apples, peeled and diced small
2/3 cup sugar + 1 tsp
1/2 cup butter, softened
2 eggs, room temperature
1/2 cup milk
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/4 cup brown sugar
2 tsp ground cinnamon, divided

Directions

Preheat oven to 350 degrees.  Prepare muffin pan with baking cups or non-stick cooking spray.

In a small bowl sprinkle diced apples with 1 teaspoon of cinnamon and 1 teaspoon sugar.

In a large bowl beat white sugar and butter with an electric mixer until smooth.

Beat in eggs on at a time, then stir in milk and vanilla

In a separate bowl whisk together flour and baking powder.

Combine flour blend into egg mixture and mix just until blended.

Fold in apples.

Fill muffin cups half way with batter and bake for 15 – 20 minutes or until toothpick comes out clean.

While muffins are baking, in a small bowl mix together brown sugar and cinnamon.

Once baked, remove muffins from the oven and sprinkle generously with cinnamon sugar mixture while still warm.  Transfer to a cooling rack to cool.  Enjoy!
