Cookies and Cream Brownies

It’s not uncommon for me to have homemade treats on display in my kitchen, especially if I am expecting company.  I love the reaction I get from friends when they walk into our house and literally stop in their tracks followed by, “What is that?”

These cookies and cream brownies brought out the best reactions yet with everyone licking there lips at the sight of them.  I would have eaten more but they were gone in a flash!  They are exactly what you would hope a brownie would be with the additional burst of cookie surprise in the middle.

Don’t be turned off by the simple whipped cream topping.  With cookies and brownies in the same bite there is a lot of sweetness going on and the cream gives a nice balance.  Just remember to store them in the refrigerator or else the cream may go bad pretty quickly.  You can take it out about 30 minutes prior to serving if you are wanting softer whipped cream.  Enjoy folks!

Cookies and Cream Brownies

Ingredients

1/2 cup butter
3/4 cup sugar
1/2 cup brown sugar
2 eggs
1 tbsp canola oil
2 tsp vanilla extract
3/4 cup flour
1/2 cup cocoa powder
1/2 tsp baking soda
1/2 tsp salt
16 Oreo cookies
1 cup whipping cream
2-3 Oreo cookies, crushed

Directions

Preheat oven 350 degrees.

Combine butter and sugars.  Mix until well blended.

Add eggs one at a time, mixing until fully incorporated between additions.

Stir in oil and vanilla.

In a separate bowl, whisk together flour, cocoa powder, baking soda and salt.

Combine wet and dry ingredients in three separate parts, mixing well between additions.

Pour half of the brownie batter into a greased 9×9 baking dish.

Place oreos closely together in rows of 4 on the batter as a middle layer then top with remaining batter and spread evenly.

Bake for 20-25 minutes or until the center has set.  A toothpick inserted may have brownie on it and seem that it is uncooked but as long as it isn’t wet batter appearing and the center is set, it is cooked.  (I overcooked mine A LOT the first time because of this).

Cool completely before adding whipped cream topping.

While the brownies are cooling, using an electric mixer, beat whipping cream until thick and soft peaks form.

Spread evenly over the cooled brownies.

Top with crushed Oreos.  Cut into squares and enjoy!
