Skinny Apple Crisp

It’s about time Mother Nature!

She showed up this weekend with temperatures that didn’t require a full snow suit just to walk from the house to the car and we took full advantage of it.  With some tobogganing, snow man building and pulling my lazy child on her sled for miles I worked up a pretty good appetite…and soup or salad wasn’t going to cut it today.  I wanted a treat!

Although I am doing pretty good at keeping up with clean eating recently, there is no need to torture myself.  I love to bake, especially when I see others enjoying it.  But sometimes it’s about challenging myself to make desserts that we can all enjoy without the added guilt (and the extra pounds).

With no refined sugar, no butter and no processed flour I’ve taken this apple crisp from treat level to a full on healthy snack!  WAIT!  Where are you going?  Don’t run away on me just yet.  With apples, maple syrup, cinnamon and nutmeg there is loads of flavor and sweetness and the toasted pecans are the icing on the cake.  Now don’t do something foolish like skipping out on the ice cream, we are talking about apple crisp here.  I recommend vanilla bean 😉  Enjoy!

Skinny Apple Crisp 

Ingredients

Apple mixture:
5 granny smith apples, peeled and chopped
2 tbsp water
2 tbsp maple syrup
2 tsp cinnamon
1/2 tsp nutmeg

Crumble topping:
1 cup rolled oats
1/2 cup almond flour
1/2 cup chopped pecans
1/4 cup maple syrup
1/4 cup coconut oil, melted
1 tsp cinnamon
1/4 tsp salt

Directions

Preheat oven 350 degrees.

In a mixing bowl, combine apples with water, maple syrup, cinnamon and nutmeg and pour into an oven-safe baking dish.

In the same mixing bowl, add all the ingredients for the crumble topping and mix until combined.

Add the crumble to the top of the apple mixture and spread evenly.

Bake for 30-35 minutes or until apples are tender.  Enjoy!
