Breakfast Banana Split

Well our stay-cation is officially over.  After almost a month off from Mairead’s preschool and having Aaron home with us for an extended break, we are back to reality this week.  I don’t know why but I was having such a difficult time getting back in my groove after the holidays but I just could not seem to get ahead!  Perhaps it was having Aaron home with us for so long.  Don’t get me wrong, I hate when he has to work away and I’d rather him home, but because that opportunity is rare it often throws a wrench in our routine and I am in the vacation-mindset when he’s around.  He can be very distracting (haha) but I’m not complaining!

Often when I am cooking for just myself and Mairead I stick with a lot of meat-less meals.  I’m no vegetarian by any means but neither of us miss it and it lightens the grocery bill a lot.  But Aaron is very much a meat-eater and one thing that goes hand in hand with him being home is bacon.  I’ve seen him fry up the entire pound and eat it in one sitting!…on more than one occasion (so gross).  This might sting a little if you’re reading this Aaron, but I couldn’t care less if I ever ate another piece of bacon for as long as I live!  I’ve stopped buying it but somehow it still manages to find it’s way into my kitchen and I’m burning candles to get the stench of cooked pig out of my house on a regular basis (shutter).  I used to like bacon but I’m retiring my bacon consumption due to over-exposure.  The worst part is that Mairead shares her father’s love for bacon so it was becoming obvious that we were in need of a grease-free breakfast so this Mama took over our morning meals this weekend with healthy breakfast banana splits!

Not only was this a healthy and quick breakfast to put together, it looks like dessert!  This is one of those dishes you can easily swap one ingredient for another.  So throw in nuts, seeds, raisins or whatever fruit you have on hand on top of a yogurt covered banana.  I just used up what I had and it looked and tasted great.  And I can’t believe I managed to use up the bananas on my counter before they turned black.  That never happens!

Well I am going to enjoy a few more moments of solitude while Mairead is busy playing dolls and Aaron is busy in the kitchen making his amazing version of homemade Halifax donairs.  If you’re lucky maybe he’ll let me share his recipe someday!  Have a great week 🙂

 

Breakfast Banana Split
*Makes 2 servings

Ingredients

2 bananas, sliced in half length ways
1/2 cup plain yogurt
1/2 cup granola
1 tsp hemp seeds
1 tsp chia seeds
1/2 cup mixed berries or favorite fruit

Directions

Place banana halves in a bowl or “banana boat” and spread with yogurt.

Sprinkle on granola, hemp and chia seeds.

Top with berries.  Enjoy!
