Healthy Peanut Butter Energy Bites

Well, with September coming to an end this week we are back in full swing around here.  This means that this Mama needs some quick and easy (but healthy) snacks and meals to throw together to keep things running smoothly, especially with Aaron working out of town more and more.  When Aaron works away I tend to cook less big meals and primarily survive on salads, cheese, nuts and cereal…okay and the odd bag of ketchup chips.  Luckily Mairead appreciates a good salad and would never turn down a bowl of cereal so we’re still getting all of our food groups in.

There are dozens of variations to the healthy energy bite.  I have made this version many times (and again today) and no one has tired of them yet!  These healthy peanut butter energy bites are perfect for those of you who are constantly on the go, or for those road trips that you don’t want to have to eat gas station food the whole trip.  I even made these to take camping this summer and they were such a huge hit I had to send out the recipe to fellow campers when I got home.

This is a recipe that is easy to swap out one ingredient for another so if you are looking for a more vegan option, replace the honey with maple syrup and chocolate chunks with raisins.  If you have allergies to peanuts you can just as easily use an almond butter.  The dark chocolate chunks is purely personal preference; I usually like to purchase a decadent chocolate bar and chop it up for some of my recipes but traditional chocolate chips will work just fine.  These snacks are delicious, can be thrown together in only minutes and will give you that extra burst of energy you need for those 3 o’clock afternoon slumps.  Enjoy folks!

Healthy Peanut Butter Energy Bites

 

Ingredients

1 cup natural peanut butter
1 cup rolled oats
2/3 cup shredded coconut, lightly toasted
1/2 cup dark chocolate chunks
1/3 cup natural honey
1/4 cup ground flax seeds
1 tbsp chia seeds
1 tsp vanilla extract

 

Directions

Combine all ingredients in a large bowl and mix well.

Using you hands, roll batter into the shape of a ball, 1″-2″ in diameter

Store in an airtight container and keep refrigerated.  Enjoy!
