Breakfast-Worthy Blueberry Yogurt Popsicles

April 12, 2016

It all started with a sore throat and a cough.  The only thing that would soothe my daughter was a popsicle.  I was getting concerned that these symptoms were sticking around so long when I realized that she was feeling better and totally faking it just for the popsicles.  It’s safe to say she’s wise beyond her years!

I’m horrified sometimes at the ingredients in some of the snacks marketed to children and if I can find a way around it I usually try, so thankfully popsicles are an easy fix.  These bad boys have only 3  ingredients and can be made in minutes (aside from a couple hours in the freezer obviously).  And the best part is they are good for you!  Another bonus, the combinations of fruit and yogurt are endless and with warmer weather headed our way I have a feeling this won’t be the last of the popsicles for us.  A not-so-bonus…the blueberries left me with a purple mouth.  Aaron wasn’t here when we ate these and when he arrived home had commented that he was a little surprised I was into the red wine so early ha!  So maybe brush your teeth before heading to school to pick up the kids 😉

*Makes 6 popsicles

Ingredients

1 cup blueberries
1 cup plain yogurt
1-2 tbsp honey

Directions

Combine all ingredients into a blender and blend until well mixed.
