Healthy Apple Oatmeal Breakfast Muffins

It wasn’t until my daughter began eating solid foods that I actually took the time to eat breakfast, let alone cook it.  Nevertheless we all have those days where we’re rushing out the door and end up eating some disgusting microwaved egg sandwich at a drive-thru or skipping breakfast all together.  Well you’re not going hungry with me around!  Today I have a recipe for Healthy Apple Oatmeal Breakfast Muffins.  Delightful!

Healthy Apple Oatmeal Breakfast Muffins

Healthy Apple Oatmeal Breakfast Muffins

Ingredients:

1 cup quick cook rolled oats
1 cup plain yogurt
2 cups grated apple
2 eggs, lightly beaten
¼ cup milk
2 tablespoon canola oil
1 teaspoon vanilla extract
¾ cup whole wheat flour
¾ cup all-purpose flour
⅔ cup firmly packed brown sugar
1 ½ teaspoon baking soda
½ teaspoon cinnamon
½ teaspoon nutmeg
½  teaspoon salt

Directions:

Preheat oven to 375°F.  Mix the oats and yogurt together in a medium sized bowl and allow to sit for approximately 5 minutes.

Stir the apple, eggs, milk, oil, and vanilla in a separate bowl.  Add the apple mixture to the oats and yogurt and stir.

In a large bowl mix flours, brown sugar, baking powder, baking soda, cinnamon, nutmeg and salt.  Add the oat mixture to the dry ingredients and mix well.

Fill muffin cups ¾ way full and bake for about 30 minutes or until muffin tops are golden brown.

Store muffins in an air tight container or zip-lock bag for up to 5 days…if you can make them last that long!
